Ingredients:
130 g butter
1/2 egg (break egg, whisk and take about half out)
70 g sugar
180 g (DOUBLE SIFTED) QUeen Milling Gluten Free All Purpose Flour Blend
1 tsp baking powder
pinch of salt
1/2 tsp cinnamon
1/2 tsp nutmeg
Makes approximately 20 cookies.
Directions:
Preheat oven to 400 F
Beat together the butter, 1/2 egg and sugar until fluffy. Add the flour, baking powder, salt, cinnamon and nutmeg. Knead all the ingredients until smooth.
Wrap the dough in plastic wrap and place in fridge for about 1 hour.
Roll out the dough until about 5 mm thick on a baking and rolling mat (or a floured parchment paper covered surface) using rolling pin. Stamp with cookie stamp, or cut into desired shapes using cookie cutters.
Bake on mat or parchment paper (on cookie sheet) in preheated oven, on middle shelf, for approx 10-15 minutes.
