No. 43 Gluten Free Banana Cake
Preheat oven to 350℉. Grease and flour 2 - 9” round baking pans and set aside.
300g QM Gluten Free All Purpose Flour Blend
½ tsp salt
1 tsp baking soda
1 ½ tsp. baking powder
½ cup chopped nuts (optional)
1 2/3 cup mashed ripe bananas (approximately 3)
2/3 cup buttermilk
2/3 cup unsweetened applesauce
1 ½ tbsp. Licor 43 (optional)
In a large bowl sift together the flour, sugar, baking powder, baking soda and salt. Set aside.
Peel bananas and place in blender. Pulse. Add eggs, buttermilk, applesauce, Licor 43 (optional) and blend. Add to flour mixture and mix well. Stir in nuts.
Pour batter evenly into prepared pans and bake for 35 minutes or until toothpick inserted in center comes out clean. Remove from oven and let cool on wire baking rack. Remove from pans and ice with desired frosting and enjoy
Cream Cheese Frosting
8 oz package cream cheese, softened
1 tsp vanilla
½ cup butter (softened)
3 cups Icing sugar
Beat together cream cheese, vanilla and butter until smooth. Gradually add powdered sugar while continuing to beat. Keep adding and beating until you have reached desired consistency.
