Makes 4 waffles Note** If using frozen shredded hash browns, be sure they are thawed and squeeze out any excess water.
Ingredients:
2 cups shredded hash browns
2 eggs, beaten
1⁄4 cup milk
1⁄4 cup QUeen Milling Gluten Free Pancake Mix 2 tbsp diced red onions 2 tbsp chopped green onions
2 tbsp chopped cilantro
1⁄2 tbsp garlic powder
1⁄2 tsp salt - or more to taste
1⁄2 tsp pepper – or more to taste 1⁄2 tsp baking powder
Directions:
In a large mixing bowl add all ingredients and mix until thoroughly mixed. Let batter sit for 5 minutes while your waffle maker warms up.
Spray or oil waffle maker.
Pour 1⁄4 cup mixture into your waffle maker and spread to the edges. Cook until golden (approximately 5-7 minutes). Repeat with remaining batter.
Top with dollop of sour cream and desired toppings. For added kick, sprinkle with your favourite gluten free hot sauce.
*Waffles can be made ahead of time and frozen.
When ready to eat, remove from freezer and pop in the toaster to heat up. Then top accordingly.
