Gluten Free Waffles using QM Pancake Mix

Using QM Pancake Mix

Total Time:  30 minutes 


2 cups QUeen Milling Pancake Mix , sifted

2 tbsp sugar

1 tbsp baking powder

½ tsp baking soda

½ tsp salt

1 1/2 cups buttermilk

2 eggs beaten

1/4 cup butter + 1 tbsp, melted and divided (1 tbsp for brushing waffle iron)

½ tsp vanilla extract



Whisk flour with baking powder, sugar, baking soda and salt.  In a separate bowl, whisk milk with eggs, ¼ cup melted butter and vanilla.  Gently stir wet mixture into flour mixture until combined.  Let stand for 10 minutes.  (Or overnight.  Take out from fridge and let batter come to room temperature and give it a good stir.)

Batter will have a cakelike consistency. 

Heat waffle iron.  Brush waffle iron with melted butter to keep waffle from sticking.  Ladle batter into waffle iron, close lid and let cook until golden in colour and pulls away at top of iron lid.

Remove and top with favourite fruit, jam, spreads and syrup or honey.


  1. To make buttermilk, add 1 tbsp lemon juice or white vinegar to regular milk and allow to sit at room temperature for 5 minutes or until slightly curdled.
  2. Waffles can be frozen, between layers of wax paper, in a plastic freezer bag for up to 1 month. Pop into toaster before serving to warm through.
