Gluten Free Vanilla, Fig and Goat Cheese Bars
We find that these bake up best using a 9x9" square aluminum cake pan from the dollar store :)
Ingredients & Directions:
Line a 9x9 square aluminum cake pan with parchment paper covering 2" over sides for easy lift out.
Preheat oven to 350F
2 cups rolled oats
1 1/2 cups QUeen Milling Gluten Free All Purpose Flour Blend
1/2 cup light brown sugar (packed)
1/4 cup white sugar
1/2 tsp cinnamon
1/8 tsp nutmeg
1/2 tsp salt
1 cup butter, cut into cubes (room temperature)
8 oz fig preserves with vanilla
6-8 heaping tbsp goat cheese-room temperature (if you really like goat cheese, add more).
Mix oats, flour, sugars, cinnamon, nutmeg, and salt in a large bowl.
Add cut butter and use fingers, and rub it into a flour mixture until it becomes a crumbly texture.
Spoon 2/3 of mixture into bottom of lined pan and press down.
Spoon goat cheese over mixture and lightly spread. Then top with fig preserves. Sprinkle with the remaining crumb mixture and gently press down.
Bake 35-40 minutes or until golden.
Cool completely. Using parchment paper overhang, lift from tin and place on cutting board to cut into squares or bars.
