Gluten Free Lime Donuts

Gluten Free Lime Donuts

 

 

Preheat oven 350F and place your baking rack to the middle of your oven.

Spray or butter 2 donut pans and set aside.

 

Ingredients:

 

6 tbsp unsalted butter, melted

4 tsp vegetable or olive oil

¾ cup sugar

2 large eggs

½ tsp vanilla extract

½ cup sour cream

4 -5 tbsp fresh lime juice (your preference)

zest of 1-2 limes (your preference)

½ cup milk

2 ¼ cups QUeen Milling Superfine Pancake Mix

2 tsp baking powder

½ tsp baking soda

½ tsp salt

(Powdered sugar for dusting or making an icing to dip cooled donuts)

 

Directions:

 

In large mixing bowl add your melted butter, oil, sugar, eggs, vanilla, sour cream, lime juice, lime zest and milk. Whisk until smooth.

 

Add the flour, baking powder, baking soda and salt and whisk until you have a smooth batter.

 

Divide evenly in prepared pans, filling to ¾ full.  Place pans on middle rack in oven and bake for 12-14 minutes or until toothpick inserted in thickest part of donut comes out clean.

 

When done, remove pans from oven and let sit until completely cooled.  Then remove donuts from pan and decorate as desired.
