Gluten Free Greek Yogurt Bagels

Gluten Free Greek Yogurt Bagels

Ingredients:
200 grams QUeen Milling Gluten Free Pancake Mix
1 ½ tbsp baking powder
pinch of salt
250 grams Greek Yogurt

1 egg (beaten for wash)

Apple Cheddar:
45 grams shredded cheddar cheese (or more)
1 medium apple, peeled, cored and diced

Jalapeno Cheddar:
1 jalapeno seeded (or not) and diced
45 grams shredded cheddar cheese (or more)

Directions:
Preheat oven to 400F.
Line a baking sheet with parchment and set aside.

Whisk the QM GF Pancake Mix, baking powder and pinch of salt. Mix in greek yogurt. Mix with your hands or a wooden spoon until it forms a shaggy dough. Continue to mix until forms a ball.

At this point, add in your flavours (Apple cheddar, jalapeno cheddar, sundried tomato and asiago cheese. The possibilities are endless.)

Divide dough into 113-120 gram portions and roll into a ball. Using your thumb, make a hole in the centre and form into the shape of a bagel. Place on parchment lined baking sheet and let rest for 15 minutes.

Brush tops and sides of bagels with beaten egg and bake in preheated oven for 22 – 27 minutes or until golden brown and firm to the touch.

Let cool on baking sheet. Enjoy toasted with butter or your favourite spread.
