- 1½ cups (7 ounces, 200 grams) of QUeen Milling Gluten Free Superfine Pancake Mix
- 1½ Tablespoons (1 ounce, 20 grams) baking powder
- 1 pinch (1 gram) of salt
- 1 cup (9 ounces, 250 grams) Greek yogurt
- 1 large egg, beaten (for egg wash)
Apple Cheddar Variation
- 45 grams (2 ounces, 45 grams) shredded cheddar cheese
- 1 medium apple, peeled, cored, and diced
Jalapeño Cheddar Variation
- 1 jalapeño, seeded and diced
- 45 grams (2 ounces, 45 grams) shredded cheddar cheese
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and set it aside.
- In a bowl, whisk together the QUeen Milling Gluten Free Superfine Pancake Mix, baking powder, and a pinch of salt.
- Add the Greek yogurt and mix with your hands or a wooden spoon until a shaggy dough forms. Continue to mix until it forms a cohesive ball.
- At this point, add in your desired mix-ins (such as apple cheddar or jalapeño cheddar) and knead until they are evenly distributed.
- Divide the dough into 113-120 gram portions and roll each into a ball. Using your thumb, make a hole in the centre and form it into the shape of a bagel. Place the bagels on the parchment-lined baking sheet and let them rest for 15 minutes.
- Brush the tops and sides of the bagels with the beaten egg and bake for 22-27 minutes, or until they are golden brown and firm to the touch.
- Let the bagels cool on the baking sheet. Enjoy them toasted with butter or your favourite spread.
