  • 1½ cups (7 ounces, 190 grams) of QUeen Milling Gluten Free All Purpose Flour Blend 
  • 1 teaspoon (4 grams) baking soda
  • 1 Tablespoon (14 grams) baking powder
  • 1 teaspoon (3 grams) cinnamon
  • ¼ teaspoon (1 gram) salt
  • ½ cup (4 ounces, 113 grams) unsalted butter, room temperature
  • ¾ cup (6 ounces, 150 grams) brown sugar
  • 2 large eggs, beaten
  • 5 over-ripe bananas (19 ounces, 540 grams), mashed
  • 1 Tablespoon (15 grams) apple cider vinegar 
  • 4 ounces (113 grams) chocolate chips 

Instructions

  1. Preheat your oven to 350°F (175°C).3 Line a 9x5-inch loaf pan with parchment paper.

  2. In a bowl, whisk together the QUeen Milling Gluten Free All Purpose Flour Blend, baking soda, baking powder, cinnamon, and salt.
  3. In a second bowl, beat the softened butter and brown sugar until creamy. Add the mashed bananas, beaten eggs, and apple cider vinegar, and mix until well combined.
  4. Stir the banana mixture into the flour mixture until well blended.
  5. Add the chocolate chips and mix until they are evenly distributed throughout the batter.
  6. Pour the batter into the prepared loaf pan and let it sit for 45 minutes. This rest period is important for developing a tender texture. Then, bake for 60-65 minutes, or until a cake tester inserted into the centre comes out clean.
  7. Cool the bread in the pan for 10 minutes before removing it to a wire rack to cool completely.
