Ingredients
- 2 cups (7 ounces, 200 grams) of QUeen Milling Gluten Free Superfine Pancake Mix
- 1 Tablespoon (14 grams) baking powder
- 1 teaspoon (4 grams) sugar
- ½ teaspoon (1 gram) garlic powder
- ¼ teaspoon (1 gram) baking soda
- ⅔ cup (5 ounces, 147 grams) milk
- ⅓ cup (3 ounces, 74 grams) cold salted butter, cubed
- 1 cup (5 ounces, 134 grams) shredded cheddar cheese
For Topping:
- ¼ cup (2 ounces, 56 grams) salted butter, melted
- 1 teaspoon (1 gram) dried parsley
- ½ teaspoon (1 gram) garlic powder
- ½ teaspoon (1 gram) Italian seasoning
Instructions
- Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
- In a large bowl, whisk together the QUeen Milling Gluten Free Superfine Pancake Mix, baking powder, sugar, baking soda, and garlic powder.
- Add the cubed cold butter to the dry mixture and cut it in with a fork or pastry cutter until the mixture resembles coarse crumbs.
- Stir in the milk until just combined, then gently fold in the shredded cheddar cheese. Be careful not to overmix the dough.
- Using a large spoon, drop the dough onto the prepared baking sheet in heaping spoonfuls (about 70 grams each).
- Bake for 12 to 15 minutes, or until the biscuits are lightly golden brown on top.
- While the biscuits are baking, prepare the topping by melting the salted butter in a small bowl. Stir in the dried parsley, garlic powder, and Italian seasoning.
