- 1½ cups (14 ounces, 385 grams) mashed bananas (about 3-4 medium, very ripe)
- ½ cup (4 ounces, 113 grams) unsalted butter, melted and slightly cooled
- ¾ cup (5 ounces, 150 grams) granulated sugar
- 2 large eggs, at room temperature, lightly beaten
- ½ cup (4 ounces, 120 grams) full-fat sour cream, yogurt, or buttermilk
- 1 teaspoon (0 ounces, 4 grams) vanilla extract
- 1¾ cups (9 ounces, 245 grams) of QUeen Milling Gluten Free Superfine Pancake Mix
- 1 teaspoon (0 ounces, 4 grams) baking soda
- ½ teaspoon (0 ounces, 2 grams) baking powder
- ½ teaspoon (0 ounces, 2 grams) ground cinnamon
- ½ teaspoon (0 ounces, 2 grams) salt
For the Streusel Topping
- ½ cup (3 ounces, 70 grams) of QUeen Milling Gluten Free Superfine Pancake Mix
- ¼ cup (2 ounces, 50 grams) packed light brown sugar
- ½ teaspoon (0 ounces, 2 grams) ground cinnamon
- ¼ cup (2 ounces, 56 grams) cold unsalted butter, cut into small pieces
Instructions
Preheat your oven to 400°F (200°C). Line a 12-cup muffin tin with paper liners.
- Make the Streusel Topping: In a small bowl, whisk together the QUeen Milling Gluten Free Superfine Pancake Mix, brown sugar, and cinnamon. Add the cold, cut-up butter and use a pastry blender, two forks, or your fingertips to cut the butter into the mixture until it resembles coarse crumbs. Set aside.
