Ingredients
Oatmeal Crust
- 1 cup (3 ounces, 90 grams) gluten-free oats
- ¾ cup (3 ounces, 85 grams) of QUeen Milling Gluten Free All Purpose Flour Blend
- 12 Tablespoons (6 ounces, 170 grams) unsalted butter, softened
- ½ teaspoon (2 grams) cinnamon
Apple Pie Filling
- 2 Tablespoons (1 ounce, 28 grams) unsalted butter
- 3-4 medium apples of your choice (14 ounces, 400 grams), peeled, cored, and diced into ¼-inch cubes
- ⅓ cup (3 ounces, 75 grams) brown sugar
- 3 Tablespoons (1 ounce, 44 grams) water
- 1 teaspoon (4 grams) cinnamon
- ⅛ teaspoon (1 gram) nutmeg
- 1 Tablespoon (14 grams) of QUeen Milling Gluten Free All Purpose Flour Blend
- 2 Tablespoons (1 ounce, 30 grams) water
Instructions
- Preheat your oven to 350°F (175°C) and grease a 12-cup muffin tin.
- Make the Apple Pie Filling: In a medium pan, melt 2 Tablespoons of butter. Add the apples, brown sugar, cinnamon, nutmeg, and 3 Tablespoons of water. Cook over medium-high heat for 4-6 minutes, or until the apples are slightly softened. In a small bowl, combine the remaining QUeen Milling Gluten Free All Purpose Flour Blend and 2 Tablespoons of water, and add this to the pan. Cook for another 4-5 minutes until the apples are tender and the filling has thickened. Remove from heat and let cool.
- Make the Oatmeal Crust: In a medium bowl, combine the oats, flour, softened butter, and cinnamon until the mixture resembles coarse crumbs.
- Place 2 heaping tablespoons of the crust mixture into each muffin cup. Press the mixture along the bottom and up the sides to form a "cup." (There may be crust mixture leftover.)
- Place about 1 Tablespoon of the apple pie filling into each cup. Sprinkle the tops with any remaining crust mixture and bake for 20-25 minutes, or until golden brown.
- Cool in the pan for 10-15 minutes. Carefully remove them to a wire rack to finish cooling completely. You may need to use a knife to loosen them from the pan.
- Serve as is or with a scoop of your favourite gluten-free ice cream.
