Ingredients:
Oatmeal Crust:
1 cup gluten-free oats
¾ cup QUeen Milling Gluten Free All Purpose Flour Blend (fine)
12 Tbsp unsalted butter, softened
½ tsp cinnamon
Apple Pie Filling:
2 Tbsp unsalted butter 3-4 medium apples of your choice, peeled, cored and diced into ¼ inch cubes
1/3 cup brown sugar
3 Tbsp water
1 tsp cinnamon
1/8 tsp nutmeg
1 Tbsp QUeen Milling Gluten Free All Purpose Flour Blend (fine)
2 Tbsp water
Directions:
Preheat oven to 350F and grease a 12 cup muffin tin.
In medium pan, melt butter. Add apples, brown sugar, cinnamon, nutmeg and 3 Tbsp water. Cook over medium-high heat for approximately 4-6 minutes or until apples are slightly softened.
In a small bowl, combine flour and 2 Tbsp water. Add to pan with apples and continue to stir while cooking for another 4-5 minutes until apples are tender and filling has thickened. Remove from heat and let filling cool.
In a medium bowl combine ingredients for the oatmeal crust until mixture resembles course crumbs. Place 2 heaping tablespoons of crust mixture into each muffin space. Press along bottom and up sides to form a “cup”. (There may be crust mixture leftover.)
Place approximately 1 Tbsp of apple pie filling into each “cup”. Sprinkle tops with any remaining crust mixture and bake 20-25 minutes or until golden brown.
Cool in pan for 10-15 minutes. Remove from pan to wire rack to finish cooling completely. You may need to use a knife to loosen from pan – do so carefully.
Serve as is or with a scoop of your favourite gluten free ice cream. Happy Baking 😊
