Ingredients

fresh zucchinifresh eggstable saltfreshly grated parmesan cheesewhite cheese of choice, best when using either emmental or swiss for more robust flavour

  • 3 medium zucchini (2 grated, 1 sliced thin into rounds) 
  • ½ cup (90 grams) of QUeen Milling All Purpose Gluten Free Flour Blend 
  • 2 large eggs, slightly beaten 
  • 1 pinch of salt 
  • ½ cup (50 grams) grated Parmesan cheese 
  • 6 slices Emmental or Swiss cheese, or a cheese of your choice 

 

Instructions

  1. Preheat your oven to 350°F (175°C).1 Line a 9x13 inch baking pan with parchment paper.
  2. Grate two of the three zucchinis into a large bowl. Add the slightly beaten eggs, the QUeen Milling All Purpose Gluten Free Flour Blend, and a pinch of salt. Using a fork, mix until all ingredients are well combined.
  3. Stir the grated Parmesan cheese into the zucchini mixture.
  4. Spread half of the zucchini mixture evenly into the prepared baking pan.
  5. Arrange the cheese slices over the first layer of zucchini mixture, spacing them out evenly.
  6. Gently spread the remaining zucchini mixture on top of the cheese slices.
  7. Arrange the thin zucchini rounds evenly over the top layer. For an extra touch, you can sprinkle a small amount of grated Parmesan cheese over the zucchini rounds.
  8. Bake for 25 to 35 minutes, or until the top is lightly golden and the bake is set.
  9. Lift the bake out of the pan using the parchment paper and let it cool to room temperature before serving.
