This straightforward recipe lets you press the pie dough into the pan or roll it onto parchment paper for a more even thickness before flipping it into a pie plate. The ingredients include butter, avocado oil and water, with the combined QUeen Milling Superfine white rice flour and QUeen Milling Superfine Pancake Mix.
Ingredients:


Gluten Free Flour Mixture:
180 grams QUeen Milling Superfine White Rice Flour
20 grams QUeen Milling Superfine Pancake Mix
1.5 grams or 1/4 tsp of salt
70 grams of unsalted butter
60 grams of avocado oil (if you don’t have avocado oil you can use shortening)
30 grams of sour cream
30 grams of water
13 grams of white sugar
1 egg optional
Directions:
1) Preheat the oven to 375°F - rack will need to be in middle position. In a saucepan combine the butter, oil, sour cream, water and sugar. Over medium heat, bring to a simmer and melt all the ingredients. Once melted and its simmering add the flour mixture. Remove pan from heat and quickly stir until the dry ingredients are completely incorporated without dry patches. The dough will be very soft and malleable.
2) At this point you can scrape the hot dough into a 9” pie plate or parchment paper. Using a spatula or your hands or the bottom of a vessel, such as a dry measuring cup, press dough into the bottom of pie plate or roll out on parchment paper. You can use your hands when the dough is cool enough to continue to press into corners and up sides of the pie plate until the dough has an even thickness about ½” . Crimp edge or a method you like, making sure it sits on the rim of the pie plate, this will help prevent sides from slipping during baking.
3) Line the dough with a large sheet of foil paper, pressing gently into the corners and against the side, then fill about two cups pie weights. Bake until the dough is set approximately 15-20 min. Lift foil paper carefully with weights, if the crust bubbles, then prick with fork. If you are aiming for a par-baked pie shell, bake for approximately 10-15 min; fully baked 15-20 min. Let cool and fill with favourite filling.
Note: You can use egg white on bottom of pie crust before filling.
Brush slightly beaten egg white on par-baked pie crust and place in 375°F oven for 2-3 minutes.
