Ingredients
- 1 cup (112 grams) of QUeen Milling Gluten Free All Purpose Flour Blend or Pancake Mix, sifted

2 large eggs

¾ cup (177 grams) milk

½ cup (118 grams) water

3 Tablespoons (42 grams) butter, melted and cooled (plus additional for pan)
- ¼ teaspoon (1 gram) salt
For Sweet Crepes: Add 1-2 Tablespoons (1 ounce, 20 grams) sugar and 1 teaspoon (4 grams) vanilla extract
For Savoury Crepes: Add ¼ cup (6 grams) finely chopped herbs

Instructions

In a blender, combine all of the ingredients for your chosen crepe (sweet or savoury) and pulse until smooth

Heat a 10-inch non-stick pan over medium heat and lightly brush it with melted butter.

Pour ¼ cup of batter into the centre of the pan and swirl to spread it evenly.

Cook for about 35-45 seconds, until the edges begin to curl. Flip and cook for another 30 seconds.

Remove the crepe to a plate to cool. Repeat with the remaining batter.
- Roll the crepes or lay them flat to cool, and fill them with your favourite fillings.
