Gluten Free Zucchini Bake
Preheat oven to 350F
Line a 9” x 13” baking pan with parchment paper
Ingredients:
3 medium size zucchini (2 grated, one sliced thin - 1/16” (1.57mm) in rounds.
90 grams QM Gluten Free All Purpose Flour Blend
2 eggs (slightly beaten)
pinch of salt
50 grams grated Parmesan Cheese
6 slices Emmental or Swiss Cheese or cheese of your choice
Directions:
Grate 2 of the 3 zucchini into a bowl.
Add the slightly beaten eggs, flour and pinch of salt. With a fork blend until ingredients are mixed.
Stir in grated Parmesan Cheese.
Add half of the zucchini mixture to the baking pan and spread evenly. Lay cheese slices on top so that they are spaced out evenly.
Spread remaining zucchini mixture on top of cheese slices.
Top with round slices of zucchini, evenly spaced.
**If you wish, sprinkle a small amount of grated Parmesan over zucchini rounds.
Bake for 25-35 minutes or until top is slightly golden.
