Cinnamon Bun Muffins (Gluten Free) Overnight Recipe

Batter:

313g QM Gluten Free All Purpose Flour Blend

18g baking powder

1.5g salt

200g granulated sugar

113g unsalted butter, melted and cooled

2 large eggs

180g milk

60g sour cream

1 tsp vanilla extract

 

Streusel Topping:

63g QM Gluten Free All Purpose Flour Blend

110g brown sugar

1 tbsp ground cinnamon

½ tsp nutmeg

56g unsalted butter melted and cooled

 

Frosting:

170g cream cheese (room temperature)

30g unsalted butter (room temperature)

120g icing sugar

1 tsp vanilla extract

 

Directions:

For the batter, whisk flour, baking powder and salt in a medium size bowl.

In a large bowl, whisk granulated sugar and melted butter.  Then whisk in eggs.  Add milk, sour cream and vanilla and whisk until smooth.  Gradually add in flour mixture and mix until combined.  (Batter may contain lumps.  This is okay, do not over mix).  Cover and refrigerate overnight.)

 

In the morning, remove batter from refrigerator and let sit while you make the streusel topping.

 

Streusel topping:  In a small bowl, whisk flour, brown sugar, cinnamon and nutmeg.  Stir in butter until combined and mixture is crumbly. 

 

Preheat oven to 400F. Line 2-12 cup muffin pans with muffin liners alternating, so that there is a space between each.  This will allow the muffins to have more rise.  Fill the empty muffin cups ¾ full of water.

 

Keep aside ¼ cup of the streusel topping, and fold remaining streusel topping into the batter until combined.  Then fill each muffin-lined cup with the batter - ¾ full.  Top with sprinkling of streusel that was kept aside.

 

Bake for 10 minutes.  Then reduce temperature to 375F and bake until starting to turn golden colour and toothpick inserted in middle comes out with a few crumbs.  (Approx 8-10 minutes.) 

 

Let sit in pan for 10 minutes then remove to wire rack to cool completely.

 

Prepare frosting by combining all ingredients in a bowl and beat until smooth. 

Top muffins with desired amount of frosting.
