Gluten Free German Pancake

 

Ingredients:

 

Bag of Queen Milling Pancake Mix with a stack of pancakes and blueberries on the label.

 

1/8 cup unsalted butter

3 large eggs

½ cup milk

½ cup QUeen Milling Superfine Pancake Mix

1 tsp vanilla (optional)

pinch of salt

 

Directions:

 

Place unsalted butter into a large cast iron skillet and place skillet into the oven.  Preheat oven to 400F.

 

While oven is preheating, combine the eggs and milk.  Whisk together lightly. 

Add QUeen Milling Superfine Pancake Mix, vanilla (if using) and salt and whisk until combined.

 

Once oven has reached 400F, using oven mitts, take the cast iron skillet from oven.

Pour in the batter and return skillet to the oven and bake for 15-20 minutes or until golden and puffy.

 

It is important not to open the oven door while cooking, as this may cause the pancake to either not rise or deflate.

 

Once baked, using oven mitts, remove skillet from oven and serve as is, or lightly dust with icing sugar and serve.

 

*NOTE:  The pancake, once removed from the oven, will deflate.

 

Once large skillet pancake can serve 2-4 people.
