Ingredients:
6 Tbsp QUeen Milling Gluten Free Pancake Mix or QUeen Milling Gluten Free All Purpose Flour Blend
2 Tbsp gluten free corn meal
½ tsp baking powder
½ tsp salt
¼ tsp cayenne pepper
¼ tsp onion or garlic powder
1 egg
5 Tbsp milk
1 ½ cup fresh cooked, shelled corn
1-2 cloves garlic minced
1-2 green onions - sliced thinly
Neutral oil of choice for frying
Directions:
In a bowl, mix together dry ingredients.
Add egg, milk, corn, minced garlic and green onions. Still until thoroughly combined.
Heat about ¼ inch of oil into your frying pan.
Using an ice cream scoop, or spoon size of your choice, gently pour into the hot oil. Let fry on each size until golden brown.
Remove cooked fritters onto a paper towel lined plate.
Enjoy hot or cold, with a spicy aioli or other sauce of your choice.
